I'm needing to update stats on all tables in the database, and an unsure how to do so, and haven't been able to find any documentation for it. Could someone help me in this, either point me to the documentation, or show me the code on how to make this happen.

Use dbms_stats but Oracle does it automatically in 10g.

I don't have a 10g database now but if you have one just check the scheduled jobs one is relative to statistics computation.
